Eng Huy Ung, 79, died Saturday, December 27, 2014 at Essentia Health, Fargo, ND.
Eng Ung was born in Battambong, Cambodia on May 12, 1935. Her parents escaped from communist China and settled in Cambodia to provide a better life for their family. She grew up in Cambodia, she was the oldest of thirteen children.
In 1954, in Cambodia, she married Chy Hay Uong at the age of 18. She and her husband owned and operated a bakery and grocery store in Cambodia.
She and family survived the terrors of the communist regime from 1975 to 1979, and together they escaped and took refuge at a refugee camp in Thailand. The family came to the United States through a sponsorship by Thurston and Christine Nelson of Hillsboro through Lutheran Social Services. They lived at the Nelson’s farm during the fall and winter of 1979, after which they moved to Fargo a year later.
In 1980, she started working various jobs in the area, including Chi-Chi’s, Doublewood Inn, Villa Maria and Essentia. She was even awarded employee of the month at Chi-Chi’s and Villa Maria.
There was many times where she worked two or three jobs at a time. She was hard-working, a perfectionist and was very committed to family and work.
Back in Cambodia she still helped her parents take care of her younger siblings, while she was married and had kids of her own. She even took care of her grandkids.
She was forced to retire, at the age of 75, in order to take care of her husband. He only wanted her to take care of him. Her health deteriorated after a fall, while taking care of Chy.
She is survived by son, Tony (Dany) Wong; daughters Sue Jade Wong (Choung), Sue Lang Wong, Amy (Thanh) Tran, and Sue Kheng (Curt) Pekarek, fourteen grandchildren and five great-grandchildren; two sisters; three brothers; and daughter-in-law, Lee Kung Uong.
She was preceded in death by her husband, Chy Hay Uong; sons, Song Hua Uong and Maw Kheng Uong; parents, Buc Soy Ung and Sye Kim Chour; two brothers and one sister.
